Festive Turkey with Dumplings

Preparation process
Turkey:
- Clean the turkey, season it with salt and pepper, and let it rest for 30 minutes to absorb the seasoning.
- Place citrus fruits in the roasting pan, tuck butter pieces under the turkey skin, and pour over melted butter infused with rosemary and thyme.
- Roast at 200°C for 30 minutes, then continue roasting for another 3 hours at 180°C with added steam.
Red Cabbage Dumplings:
- Knead a medium-firm dough by hand or using a food processor.
- Coat the dough with oil and let it rest in a covered container for 30 minutes.
- On a floured cloth, roll out the dough slightly, brush with melted butter, then stretch it by hand and brush with butter again.
- Spread the filling over the dough and roll it up.
- Grease a baking dish, place the dumpling inside, and steam for 30–40 minutes. Alternatively, wrap it in a damp cloth, sprinkle with breadcrumbs, tie the ends, and boil in salted water for 30 minutes.
- For the filling, shred the red cabbage. Cut the carrot and leek into strips, sauté in butter, season with salt, and add thyme.
Gratinated Cauliflower:
- Clean the cauliflower, separate it into florets, and boil in salted water for 10 minutes.
- In a pan, melt butter, add milk, nutmeg, and salt, stirring until the béchamel thickens.
- Place the cauliflower in a baking dish, pour over the béchamel, and sprinkle with grated cheese.
- Gratinate in the oven until golden brown.
