A juicy turkey, soft dumplings, and crispy gratinated cauliflower make for the perfect festive meal. Get ready for a delicious feast! 🎉

Preparation process

Turkey:

  1. Clean the turkey, season it with salt and pepper, and let it rest for 30 minutes to absorb the seasoning.
  2. Place citrus fruits in the roasting pan, tuck butter pieces under the turkey skin, and pour over melted butter infused with rosemary and thyme.
  3. Roast at 200°C for 30 minutes, then continue roasting for another 3 hours at 180°C with added steam.

Red Cabbage Dumplings:

  1. Knead a medium-firm dough by hand or using a food processor.
  2. Coat the dough with oil and let it rest in a covered container for 30 minutes.
  3. On a floured cloth, roll out the dough slightly, brush with melted butter, then stretch it by hand and brush with butter again.
  4. Spread the filling over the dough and roll it up.
  5. Grease a baking dish, place the dumpling inside, and steam for 30–40 minutes. Alternatively, wrap it in a damp cloth, sprinkle with breadcrumbs, tie the ends, and boil in salted water for 30 minutes.
  6. For the filling, shred the red cabbage. Cut the carrot and leek into strips, sauté in butter, season with salt, and add thyme.

Gratinated Cauliflower:

  1. Clean the cauliflower, separate it into florets, and boil in salted water for 10 minutes.
  2. In a pan, melt butter, add milk, nutmeg, and salt, stirring until the béchamel thickens.
  3. Place the cauliflower in a baking dish, pour over the béchamel, and sprinkle with grated cheese.
  4. Gratinate in the oven until golden brown.
